I started a vegan diet to increase my productivity, energy, and mental stability. Throughout my teen years I struggled with unhealthy eating including binging, restricting, and choosing junk over healthy options. I never thought I would go vegan considering my favorite foods were cheese and sausage, but I also never imagined how good the vegan lifestyle would make me feel. Going vegan made me more compassionate for the animals that I was choosing not to consume, appreciate the access that I had to fresh foods, and grateful for everything I was given in this life! I give a lot of credit to the foods that I eat for myself being so happy. Meal prepping is a great way to save time and always have a healthy option to throw together quickly. When I meal prep, I make my favorite staples in my kitchen on Sunday for the whole week.
